It is, in every sense of the word, a "classic".  Sumatra Mandheling is one of the few coffees in the world that is known for the name of the people who are primarily responsible for growing and processing it rather than the name its region of origin.  There is a legend that a Japanese soldier stationed on Sumatra during the second world war was drinking a cup of coffee and asked a man about the origin of it.  The man was confused and thought he asked about his origin, and since he was part of the Mandheling ethnic group, he replied "Mandheling".  After the war, a Japanese coffee merchant inquired about where he could purchase some "Mandheling" coffee to export, and thus the name stuck. <br /><br />Cupping Notes: A Typical Sumatra with a creamy body and loamy sweet flavors. It also has all the wild jungle flavors and earthiness you would expect in a Sumatra.<br /><br />Varietal: Bergendahl, Djember, Ateng, Catimor, Java<br /><br />Processing:  Dry Processed (DP)<br /><br />Grade:  1<br />

This “dry” mill has the capacity to patio-dry (Sun dried) and to dry mechanically about 35000 bags on a continuos flow basis.

Nueva Segovia, because of its climate and altitude range produces one of the best quality coffees in Nicaragua. Its production is 100% Arabica (mainly Typicas and caturra), using environmentally sound practices, with some organic farms complying fully with the international standards for organic certifications.

Nicaraguan Coffees have been classified around the world as one of the best “Central American milds,” specially coffee from “La Segovia.” This specific region has special characteristics which are now known worldwide due to its participation in the Cup of Excellence and CQI auctions since 2002-2003, with some lots occupying first places and very high standings throughout these past years. Out of 25 coffees auctioned in Cup of Excellence 2008, 20 were from the Nueva Segovia region.

Florencia Mill is focused on transparency. They weigh, dry and store the coffee, classifying by sub-region and altitude with the necessary traceability to know which farmer produces it.

Florencia also has a laboratory where they cup/taste each lot. These are analyzed each day and stored independently depending on their quality standard. Each lot received in the mill has full transparency documentation, enabling them to identify the quality standard of each sub region for future purchases.

Quality in Nicaragua is obtained from the producer, as they are the ones in charge of harvesting and picking the correct cherries and processing them at their “micro” mills within their farms. Once processed and received, La Florencia is in charge of preserving this quality throughout the chain. This ensures consistency and transparency lot by lot. <br /><br />Cupping Notes: I enjoy the Florencia as an evening coffee.  The flavor is dark while bearing a dry fruit, caramel, and toffy profile. Yes, it's a tedious process, taking numerous visits per tree each year, all because coffee cherries do not all ripen at the same time.
A single branch of a coffee tree might very well bear blossoms, green fruit, and ripe cherries simultaneously.

Ethiopian Yirgacheffe is a washed coffee in which the coffee beans, after having the outer layers of skin and fruity pulp removed, are soaked up to 72 hours in fermentation tanks. Beans treated with this "wet" method will generally have a higher acidity, a cleaner winey or floral flavor, and more of a full body than the beans processed by the dry method.<br /><br />Cupping Notes: This Coffee is typical of coffees from the Yirgacheffe area of Sidama.  It has a pronounced lemon and red berry flavors with a tea-like finish and hints of jasmine.<br /><br />Varietal: Local Heirloom Types<br /><br />Processing:  Wet Processed (WP)<br /><br />Grade:  2<br /><br />

The town itself consists of a single street draped along the top of a gorgeous ridge with a commanding view of the lush green valleys on either side. At the highest point in town sits a brick-clad church and bell tower.

The coffee grown here is Caturra and Typica varietal. Each family has its own de-pulping and fermentation set up, along with raised drying screens protected from the rain by parabolic roofs of transparent plastic. The town itself consists of a single street draped along the top of a gorgeous ridge with a commanding view of the lush green valleys on either side. At the highest point in town sits a brick-clad church and bell tower.

The coffee grown here is Caturra and Typica varietal. Each family has its own de-pulping and fermentation set up, along with raised drying screens protected from the rain by parabolic roofs of transparent plastic. It is great as a morning cup or anytime you just want to drink Coffee.  As for flavors the Monserrate has an excellent Floral flavor that runs from the taste to the aroma.
